Debra's Cornbread

Note: Modified from the back of the Jiffy box. Serves 6-8 side-dish portions.


Ingredients

1 box Jiffy cornbread

1 egg

1/3 cup whole milk

1 15 oz can creamed corn

1/2 cup corn flour (Maseca)


Instructions

1. Preheat oven to 400 degrees F.

2. Grease an 8"x8" or 9"x9" glass pan with butter (I use an old butter wrapper).

3. Empty the Jiffy mix into a medium bowl and use a fork to remove lumps.

4. Combine all remaining ingredients into the bowl with the Jiffy mix.

5. Pour batter into square greased pan. Flatten out the top with a silicone spatula.

6. Bake at 400 degrees for 30-40 minutes.

7. Test for doneness with a toothpick (should come out clean).

8. Remove to a cooling rack and cool for about 10 minutes before serving warm.
