Cranberry Fruit Relish

Notes: Original recipe for Thanksgiving by Debra Steppel


Ingredients

-12 oz. bag of fresh cranberries (~3 cups)

-1/2 cup sugar (more to taste)

-1/4 cup water

-1 large or 2 small apples - any type

-1 large pear - any type

-1 large orange OR 2-3 clementines OR 1 can mandarin oranges (drained)

-handful of fresh strawberries (5 large or 10 small) and/or 1 pint of fresh raspberries

-1/2 cup chopped walnuts or pecans (omit if anyone is allergic)


Mise en Place

1. Wash cranberries in colander; remove stems and any spoiled berries

2. Core and dice the apple and pear

3. Peel and section the orange(s), and cut each section in 1/2 (or open and drain the mandarins)

4. Wash strawberries and remove all greens and white parts; cut strawberries in halves or quarters

5. Wash raspberries


Directions

Boil all ingredients in a large saucepan, uncovered, for about 20-30 min until cranberries begin to "pop." Cool overnight in the refrigerator. Serve chilled.
