Coconut Lime Rice

Notes: Serve with any Caribbean or Thai main course.


Ingredients

1 cup dry rice (rinsed in a colander or strainer)

1 can (13.5 oz.) coconut milk

1/4 cup lime juice

1/2 cup water

1 tsp salt


Directions

Cook above ingredients together for 20 min. in a covered saucepan (or rice cooker). Stir mid-way to prevent rice from sticking to the bottom of the pan. Watch carefully if using a rice cooker; make sure the ingredients start out only filling half the size of the rice cooker, otherwise it might boil over.
