Ingredients
2 lbs. large raw shrimp, peeled and deveined, rinsed and pat dry with paper towels
5 cloves (about 2 Tblsp) minced garlic
15oz can diced tomatoes (DRAINED WELL)
fresh or dried parsley
2 Tblsp. lemon juice (and optional zest of 1 lemon)
Salt and fresh ground pepper to taste
8 oz. crumbled feta cheese
Directions
Preheat oven to 400 degrees.
Line a sheet pan with foil.
Place shrimp on the lined pan.
Cover shrimp with garlic, drained tomatoes, lemon juice and zest, salt and pepper. Sprinkle parsley on top.
Bake for 7-8 minutes.
Sprinkle with feta cheese.
Bake another 5 minutes, until shrimp is cooked through.
Serve over spaghetti with a side green vegetable.
