Sheet Pan Shrimp Scampi with Feta and Tomatoes

Ingredients

2 lbs. large raw shrimp, peeled and deveined, rinsed and pat dry with paper towels

5 cloves (about 2 Tblsp) minced garlic

15oz can diced tomatoes (DRAINED WELL)

fresh or dried parsley

2 Tblsp. lemon juice (and optional zest of 1 lemon)

Salt and fresh ground pepper to taste

8 oz. crumbled feta cheese

Several stalks of raw celery, diced


Directions

  1. Preheat oven to 400 degrees.

  2. Line a sheet pan with foil.

  3. Place shrimp on the lined pan.

  4. Cover shrimp with garlic, drained tomatoes, lemon juice and zest, salt and pepper. Sprinkle parsley on top.

  5. Bake for 7-8 minutes.

  6. Sprinkle with feta cheese.

  7. Bake another 5 minutes, until shrimp is cooked through. Mix with chopped celery.

  8. Serve over spaghetti with a side green vegetable.
