Cheesy Grits

Notes: Originally from Bobby Flay. Total:40 min: Prep: 15 min, Cook: 25 min. Yield: 4 servings. Best with Bobby Flay's shrimp (and spinach or a side green vegetable).

Leftovers (if any) are great for breakfast or snack.


Ingredients

4 cups milk

Salt and pepper

1 cup grits

1.5-2 cups shredded cheddar cheese (or any melty cheese)

(For a smaller portion: 3 cups milk, 3/4 cup grits, 1 or 1.5 cups shredded cheddar)


Stovetop method:

Bring milk to a gentle boil. Add salt and pepper.

Add grits and cook until milk is absorbed, about 20 minutes, stirring occasionally.

Remove from heat and stir in butter and cheese.


Microwave method:

In a large glass bowl, combine grits, milk, salt, and pepper. Place bowl on a microwave-safe plate (in case it overflows).

Microwave on High for 2 minutes at a time, stirring to combine and remove lumps between microwave sessions.

After about 6-8 minutes (in 2-minute bursts), the grits will have absorbed most of the milk.

At that point, add the shredded cheese and stir to combine. The cheese will melt.

Microwave on High for 2 more minutes and stir until cheese is mixed evenly throughout.

Serve immediately.
