Carrot Salad

Notes: This is a great side dish for BBQs.


Ingredients

3-4 cups (1 lb.) shredded carrots (use food processor to shred)

1/2 cup raisins

1 cup crushed pineapple (drained)

2 Tbsp. frozen OJ concentrate

1/3 cup mayonnaise (lowfat OK)


Directions

Mix all ingredients except mayonnaise.

Refrigerate until just before ready to serve.

Before serving, drain off liquid that has accumulated at the bottom of the bowl (drink it; it's delicious!), then stir in the mayonnaise.
