Artichoke and Heart of Palm Bruschetta

Notes: Makes about 3 cups. Serve with veggies or chips or crackers or pita crisps. Great for outdoor summer picnics/BBQs because there is no mayonnaise so it won't spoil.


Ingredients:

20 pieces (quarters) of marinated artichoke hearts plus "juice" (oil/spices) (from Costco)

6 pieces Heart of Palm (1/2 jar from Costco)

2 Tbsp. dehydrated onions, rehydrated in ~1 Tbsp. water

2 tsp. red wine vinegar

1 Tbsp. sugar

1 tsp. Worcestershire sauce

1 tsp. garlic powder or granulated garlic

1/2 tsp. salt

1/8 tsp. Frank's Hot Sauce (or equivalent)

1/2 Tbsp. lemon juice

chopped fresh or dried parsley for color


Directions

Food process the artichoke hearts and hearts of palm until rough chopped. Remove vegetables from food processor and put in a bowl. Add all other ingredients and mix well.
