Ingredients
4 lb chicken wings (cut into wingettes and drumettes)
2 Tblsps baking powder (NOT BAKING SODA and NOT BI-CARB SODA)
1 teaspoon Kosher salt or sea salt
Cooking spray
Mise en place
1. Break chicken wings into separate wingflats and drumettes. Remove and discard the thin tips that don't have any meat on them.
2. Combine baking powder and Kosher salt in a gallon-sized Ziploc bag.
3. Line the bottom half of a broil pan with heavy duty foil.
4. Generously spray the top half of a broil pan with cooking spray.
Wing directions
1. Preheat oven to 250 degrees F. Place one oven shelf in the lower quarter of the oven and the other shelf in the top quarter.
2. Pat all surfaces of the wingette and drumette halves dry with paper towels.
3. Place the wingette and drumette halves in the Ziploc bag and coat all surfaces evenly with the salt/baking powder mixture.
4. Place the powder-coated halves on the broil pan, skin side up.
5. Bake 30 minutes at 250 degrees
6. Crank up the temperature to 425 degrees.
7. Bake on the top rack at 425 for 20 minutes.
8. Flip each wing and use a silicone pastry brush to coat with whatever sauce you plan to use.
9. Bake on the top rack at 425 for 20 more minutes.
10. Flip each wing again and use a silicone pastry brush to coat the other side with sauce.
11. Bake on the top rack at 425 for 5-10 more minutes.
Make the wing sauce during the first 30 minutes the wings are in the oven. You can use the recipe below for Buffalo wings, or use any thick BBQ sauce or wing sauce, either right from the bottle or whatever recipe you like..
Buffalo sauce ingredients
2-3 Tbsp unsalted butter, melted
1/2 cup Frank’s Original Red Hot Sauce
1 tbsp brown sugar (can use less for less sweet wings)
1/4 tsp Kosher salt
Buffalo sauce directions
1. In a glass measuring dish, melt butter in the microwave (cover with a butter wrapper to prevent splattering.
2. Add salt and brown sugar and stir until dissolved.
3. Add Frank's until thoroughly mixed.
