Guacamole

Notes: Debra Steppel's original recipe. Make it earlier in the day but wait until the last minute to stir in the mayonnaise.


Ingredients

- 3 ripe avocados

~2 tablespoons of lime juice (1 large or 2 small fresh limes, or bottled juice)

~2 heaping tablespoonfuls of sourcream (lowfat OK)

~2 heaping tablespoonfuls of salsa (any type you like)

Generous sprinklings of the following spices:

- dehydrated onion flakes

- garlic powder

- cilantro (fresh preferred -- stems removed -- but can use dried if fresh isn't available)

- chili powder (to taste)

~2 heaping tablespoonfuls of mayonnaise (lowfat OK)


Directions

1. Cut open avocados; remove pits and mash gently with a fork in a medium non-reactive container with a lid.

2. Squeeze lime juice over the avocado.

3. Optional: zest the lime rind over the avocado (if using fresh limes).

4. Add sour cream, salsa, and 4 spices listed above.

5. Mix gently to combine, then use a spoon to flatten the top.

6. Gently smear the top with mayonnaise to prevent the avocado from turning brown before serving. Cover and refrigerate.

7. Just before serving, stir in the mayonnaise. Serve with taco chips (SCOOPS if possible).
