Zucchini Cookies

Notes: Originally from Grandma Chokey (Jim Chokey's grandmother). Makes about 3 dozen. Can be doubled and excess dough frozen and baked another day.


Ingredients

1 cup Sugar

1/2 cup Butter -- softened

1 Egg -- beaten

2 cups Flour

1 tsp Baking soda

1/2 tsp Ground Cloves

1 tsp Ground Cinnamon

1/2 tsp Salt

1 cup Raisins

1 cup Nuts -- chopped

1 cup Zucchini -- grated either by hand or in a food processor


Directions

1. Preheat oven to 375.

2. Cream sugar, butter & eggs until fluffy & well blended. Sift together dry ingredients and add to mixture, blending well. Stir in raisins, nuts and zucchini.

3. Drop by teaspoonfuls onto a greased cookie sheet. Bake at 375 for 12 to 15 minutes.
