Lemon (Etrog) Cookies

Notes: Makes ~4 dozen. Original recipe from Michelle Nicotera.


Cookie Ingredients

1 pkg. Duncan Hines Lemon Supreme cake mix

1/3 cup vegetable oil

2 eggs

1 Tbsp. fresh lemon juice


Glaze Ingredients

2 cups powdered sugar (also called confectioner's sugar or 10X sugar)

3-4 Tbsp. fresh lemon juice (remaining juice of the same whole lemon)

zest of 1 lemon


Directions

1. Preheat oven to 350 degrees F.

2. Mix cake mix, oil, eggs, and 1 Tbsp. lemon juice together by hand. Dough will be stiff.

3. Drop dough on ungreased cookie sheet.

4. Bake at 350 degrees F for 12-14 minutes.

5. While cookies are baking, make the glaze: Mix glaze ingredients together in a small glass bowl.

6. Let cookies cool on the cookie sheets for 1 minute, then transfer to wire racks.

7. Place the racks on top of the cookie sheet and drizzle the cookies with glaze. (The cookie sheets will catch the glaze as it drips down the sides of the cookies.)
