Cranberry Orange White Chocolate Chip Cookies

Notes: Original recipe from Taste of Home Cookies, p. 80. Modified significantly by Debra Steppel. First made for teacher gifts 2019.


Ingredients

1 stick (1/2 cup) butter, softened to room temperature

1/2 cup shortening

3/4 cup brown sugar

2 eggs (brought to room temperature)

2 tsp. vanilla extract

2 1/4 cups all-purpose flour

1 tsp baking soda

1/2 tsp salt

12 oz bag white chocolate morsels

2 cups dried cranberries, sorted so they don't stick together

zest of 1 large or 2 small oranges


Directions

Preheat oven to 375.

In a large bowl, cream butter, shortening, and brown sugar. Add eggs one at a time, beating well after each addition. Beat in vanilla. Zest the orange into the creamed mixture. In a separate medium bowl, combine flour, baking soda, and salt. Gradually add dry mixture to the creamed mixture. Stir in the morsels and cranberries.

Drop by heaping teaspoonfuls onto parchment-paper-lined cookie sheets about 2" apart, making sure there are some cranberries and some morsels in each cookie. Bake at 375 for 10 minutes, until just turning golden brown (rotate pan 180 degrees halfway through baking time). Cool for 2 minutes before removing to wire racks.
