Banana Cake

Notes: Originally from Barbara Steppel and From Soup to Nosh


1 1/4 cups sugar

1/2 cup butter

2 eggs

1 tsp. baking soda dissolved in 4 Tbsp. sour cream

1 1/2 cups flour

1 tsp. vanilla (double to 2 tsp.)

1/4 tsp. salt

3/4 cups chopped walnuts or pecans

1 cup mashed ripe banana


Preheat oven to 350 degrees. Grease a glass loaf pan and line with parchment paper.

Soften butter to room temperature.

With electric mixer, cream butter and sugar. Add eggs and beat until very light.

Add soda dissolved in sour cream. Beat well. Add bananas, flour, salt, and vanilla.

Mix well. Bake one hour in 350 degree oven.
