Sweet Potato Casserole

Notes: Original recipe from "From Soup to Nosh" via Barbara Steppel. Variations by Debra Steppel.


Ingredients

  • 4 cups cooked sweet potatoes, mashed (40oz can or 4-5 large fresh ones, roasted or baked or boiled until soft)

  • 1/4 cup OJ or pineapple juice (or 2 Tbsp OJ concentrate)

  • 1/2 stick (1/8 lb.) butter or margarine, melted in the microwave on 50% power in a small glass dish (original recipe used double this but it's not necessary)

  • 1/2 tsp. salt

  • 1 cup miniature marshmallows plus extras to dot the top


Directions

In a large bowl, mash cooked sweet potatoes with a potato masher. Add melted margarine, juice, and salt. Stir in marshmallows. Place in a 1.5 qut casserole dish and even out the top. Dot with extra marshmallows. Bake in 350 degree oven for 20 minutes. If you want the top to be golden brown, flip to Broil for 1-2 minutes (but watch carefully so the marshmallows don't burn).
