Grilled Cilantro Lime Shrimp

INGREDIENTS

wooden or metal skewers

4 pounds shrimp, peeled and de-veined

4 tablespoons honey

2 tablespoon vegetable or canola oil

3 medium limes, juiced and zested

12 cloves garlic, minced

2 Tbsp chili powder

1 tsp cumin powder

1 tsp paprika

3/4 teaspoon salt

3/4 teaspoon cayenne pepper

1/4 cup chopped fresh cilantro

fresh lime wedges, for serving


DIRECTIONS

1. If using wooden skewers, soak them in water for at least 30 minutes.

2. In a large Ziploc bag, mix the honey, oil, juice, garlic, chili powder, cumin, paprika, salt, and cayenne pepper together. Add the shrimp and let marinate for at least 30 minutes.

3. Drain the shrimp from the marinade and place the shrimp on skewers. Grill over high heat for 2 minutes per side or until opaque.

4. Serve garnished with cilantro, fresh lime juice, and serve with guacamole or any avocado dip.
