Emeril's Cream Cheese Frosting

I use 1.5 recipes of this to frost a 3-layer Pumpkin Layer Cake)


Ingredients

  • 1 stick (1/4 lb.) unsalted butter, softened to room temp

  • 1 (8-ounce) package cream cheese, softened to room temp

  • 1 (16-ounce) box confectioners' sugar

  • 1 teaspoon pure vanilla extract

Instructions

Combine the cream cheese and butter and beat until smooth and fluffy. Add the sugar and vanilla and mix on low speed until combined. Beat on high speed until smooth and fluffy. (If frosting is too thick, thin with a bit of milk to obtain desired consistency.)
