Crockpot Cholent

Notes: Original recipe by Debra Steppel. Makes 8-10 generous servings. Serve with a green vegetable.


Ingredients

~ 2 1/2 lbs. red potatoes, each chunked in 4-6 pieces

1 lb. dried mixed beans (soaked overnight OR bring to a boil and simmer for 1 hour before putting in crockpot)

1 lb. dried barley (rinsed)

1 cup dried mushrooms (e.g. shiitake)

5-6 lbs. lean stew beef cubes

Marrow bones (optional but recommended to add depth of flavor)

3 medium or 2 large onions, diced

2-3 Tbsp. minced garlic

1/4 cup salt

1 tsp. paprika

1 small can tomato paste

4 cups water


Directions

1. Wash and cut potatoes. Place potatoes in crockpot first. Then layer the beans and barley, then meat and bones, then diced onions on top. Do not fill crockpot more than 2/3 full, as contents will expand while cooking.

2. In a separate large bowl, combine garlic, salt, paprika, and tomato paste. Slowly add water and mix with a whisk until blended. Pour liquid over everything in crockpot.

3. Cook on low for 12-20 hours, or on high for at least 6 hours.

Check periodically to make sure the liquid does not overflow the crockpot.
