Crockpot Chicken in Wine

Notes: Original from slow cooker cookbook. Serves 8-10.


Ingredients

6 lb. chicken parts (bone in)

Flour for coating

salt & pepper, garlic powder, poultry seasoning, and paprika

2-4 Tbsp. olive oil

1 lg. onion

8 oz. button mushrooms

handful of shitake mushrooms

dehydrated garlic slices

1 cup cooking wine or sherry

2 tsp. Italian seasoning

fluffy rice, orzo, or rice pilaf


Mise en Place

1. Rehydrate garlic and shitake mushrooms in the wine or sherry.

2. Rinse chicken parts & pat dry.

3. Dice onion.

4. Wash and chop mushrooms.

5. Add spices to flour and combine.

6. Coat chicken with seasoned flour.


Directions

1. In a skillet, heat olive oil and brown the flour-seasoned chicken parts. Once browned, remove chicken with a slotted spoon and place each piece in the crockpot.

2. Saute onion in the same skillet as the chicken was browned in.

3. Add the wine, garlic, and shitake mushrooms to the onions in the skillet and stir, scraping to remove brown particles.

4. Pour contents of skillet into crockpot over chicken. Sprinkle with Italian seasoning.

5. Cover the crockpot and cook on Low for 8-10 hours (or High for 3-4 hours).

Serve chicken over rice, orzo, or pilaf, and spoon sauce over the top.

Needs a green salad or vegetable.
