Beef or Turkey Stroganoff

Notes: Serves 6-8. Serve meat mixture over the noodles. Serve with a green salad or green vegetable. Ingredients 3 pounds ground beef (83% is fine); OK to substitute ground turkey 1 large onion 3 Tbsp minced garlic 3 Tbsp all-purpose flour 1.5 tsp salt 3/4 tsp paprika 1 lg (28 oz) can condensed cream of mushroom soup (or 2 regular cans) 16 oz. button mushrooms 16 oz sour cream (light OK) egg noodles or your favorite pasta Mise en Place 1. Peel and dice onion 2. Wash, slice, and chop mushrooms Directions 1. In a large skillet over medium heat, sauté the meat and onions for 10 minutes, or until the meat is browned and the onion is tender. Drain into a glass fat jar. 2. Stir in the flour, salt and paprika. Then add the mushroom soup and mushrooms, mix well and cook, uncovered, for 20 minutes. Start water boiling for noodles. 3. Reduce heat to low and add the sour cream, stirring well and allowing to heat through. Cover and set this mixture aside. 4. Cook the egg noodles or pasta according to package directions. Drain the water from the noodles.
